ha sido contribuir a la caracterizacion de los quesos de oveja con denominacion de origen roncal e idiazabal elaborados en navarra, prestando especial atencion a la flora microbiana.Para ello, se han tomado muestras de leche, cuajada y quesos en distintos estadios de maduracion y se han estudiado los principales parametros fisico-quimico y los grupos microbianos mas relevantes.Paralelamente se han identificado cepas de lactocos, lactobacilos, leuconostoc y enterococos, estudiandose la distribucion de especies en funcion de la denominacion de las queserias y del tiempo de maduracion.Asimismo, se
