Roncal e idiazabal, a nivel fenotipico, enzimatico y molecular.  los resultados mostraron que los quesos roncal presentan un predominio de la especie d. Hansenii, mientras que los quesos idiazabal exiben una microflora constituida por las especies c. Zeylanoides, p. Fermentans, k. Lactis, d.  hansenii, k. Fragilis, detectandose diferencias muy significativas entre denominaciones, debidas a la existencia de diferencias muy significativas entre queserias. Se ha visto asimismo, que las principales especies de levaduras aisladas, exhiben niveles importantes en las actividades de mayor interes en queserias tales como actividades aminopetidasicas y esterasicas. Ademas, la aplicacion de las tecnicas de biolog\u00eda molecular: pcr-fingerprinting, analisis de restriccion del adn mitocondrial y electroforesis de campos pulsados ha permitido la diferenciacion a nivel intraespecifico de las especies d.
