Carmen Vidal Aragon De Olives <\/strong><\/h2>\n<p>El sector del cerdo iberico tiene para extremadura una importancia economica, social y ecologica. Todo este sector se apoya en la elaboracion de productos nobles:  paletas, jamones y lomos de primera calidad. La calidad del jamon depende fundamentalmente de las caracteristicas de la grasa. Sin embargo, existe un desconocimiento del grado y el modo en que la grasa se ve afectada por la alimentacion y el genotipo.
