Se realizo el control mensual de cerca de 200 animales durante una lactacion.  la leche fue analizada para los parametros clasicos, reologicos (con un tromboelastografo de formagaph), rcs, y se elaboraron quesos a partir de muestra de leche tomadas de animales individualmente. Para la realizacion de esta elaboraciones experimentales se dise\u00f1o una peque\u00f1a queseria. Para el analisis de un alto numero de muestras se han puesto a punto unas calibraciones mediante la tecnica de espectrofotometria en el infrarrojo cercano para los parametros estudiados. El genotipo de la caseina alpha sl muestra una fuerte influencia sobre la tasa de sintesis de proteina verdadera y sobre el rendimiento en queseria. La clasificacion de los diferentes alelos en relacion a estas variables es similar a lo observado en razas francesas.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
