Rosario <\/strong><\/h2>\n<p>En esta tesis se ha estudiado el proceso de remontado o pardeamiento en botellas de vinos finos, para lo que se ha seguido la evolucion del color y contenidos polifenolicos durante la fase de envejecimiento biologico, a lo largo de las distintas criaderas, en las operaciones post-fermentativas- principalmente la clarificacion- y durante el almacenamiento en botella a 20 y 30 grado c durante un a\u00f1o. De acuerdo con un dise\u00f1o previamente establecido por una bodega de la zona d.O.  montilla-moriles, se realizaron 4 tratamientos clarificantes diferentes en un vino solera. En todos ellos se a\u00f1adieron bentonita y caseina, realizandose ademas la adicion de carbon activo en el 2 tratamiento, pvpp en el 3 y riduxhigh (compuesto comercial) en el 4.  los compuestos fenolicos disminuyeron, en general, a lo largo del envejecimiento, mientras que el color aumento.  el tratamiento con carbon activo fue el que elimino mas color, aunque el que tenia pvpp elimino mas compuestos precursores del remontado.
