Carmen <\/strong><\/h2>\n<p>Se ha estudiado la evolucion de la biota lactica constitutiva en tres lotes de helado de yogur almacenados en congelacion a -23grados centigrados durante un periodo superior a un a\u00f1o. El total de muestras estudiadas ha sido de 265, a las que tambien se les ha controlado el ph, la acidez titulable, y la posible presencia de microbiota contaminante.  el recuento total de bacterias acidolacticas (bal) en los tres lotes ha sido superior a 10 elevado a la septima ufc\/g, minimo exigido en la norma de calidad para el yogur, si bien un lote carecia de lactobacilos.
