{"id":133413,"date":"1997-01-01T00:00:00","date_gmt":"1997-01-01T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/agregacion-y-gelificacion-de-pectina-amidada-y-de-acido-poligalacturonico\/"},"modified":"1997-01-01T00:00:00","modified_gmt":"1997-01-01T00:00:00","slug":"agregacion-y-gelificacion-de-pectina-amidada-y-de-acido-poligalacturonico","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/quimica\/agregacion-y-gelificacion-de-pectina-amidada-y-de-acido-poligalacturonico\/","title":{"rendered":"Agregacion y gelificacion de pectina amidada y de acido poligalacturonico."},"content":{"rendered":"<h2>Tesis doctoral de <strong> Manuel Alonso Mougan <\/strong><\/h2>\n<p>Las pectinas son polisacaridos estructurales de origen vegetal, cuyo esqueleto es el acido poligalacturonico.  mediante tecnicas de difusion estatica y dinamica de luz laser se estudian las caracteristicas estructurales (masa molecular, radio estandar, longitud de contorno, n de agregacion, longitud de khun, n de segmentos de khun, longitud persistente, densidad lineal de masa, radio hidrodinamico, etc.) De los agregados macromoleculares de una pectina amidada (pam) y del acido poligalacturonico (pg) en disoluciones acuosas diluidas, asi como sus dependencias con la concentracion para varios valores del ph: 3.31, 3.83 y 6.88. Se introduce un nuevo parametro, cuya utilidad para determinar algunas geometrias se demuestra y aplica, resultando una geometria cilindrica para los agregados a las concentraciones mas bajas que se deforman hacia elipsoide para las mas altas. Se muestra tambien la utilidad de un espectrofluorimetro en medidas de difusion estatica de luz a traves de la banda rayleigh.El pg sufre sendas cineticas de agregacion a los valores de ph 3.83 y 3.31, cuyo seguimiento permitio determinar la evolucion de las anteriores caracteristicas con el tiempo. Se estudia el comportamiento reologico mediante tecnicas de oscilacion de la pam con un 50% de sacarosa a ph 3.83, resultando un comportamiento viscoso dominante que sigue un modelo de red entrelazada con fuertes interacciones hidrodinamicas (modelo de zimm).  tambien se postula su comportamiento a ph 3.31, resultando un comportamiento predominantemente elastico y tipico de un gel debil.
