El analisis de las muestras se ha centrado fundamentalmente en la extraccion con n-hexano y\/o purificacion mediante minicolumnas sep pak c-18 y silica plus.  en los estudios de la precision (rsd %) y de la recuperacion (% r) se obtuvieron en todos los casos valores superiores a 74 e inferiores a 9 respectivamente.  los limites de deteccion oscilaron entre 1.9 x 10 elevado a menos 3 y 0.19  g\/kg y los de cuantificacion entre 3.6 x 10 elevado a menos 3 y 0.40  g\/kg.  se han analizado un total de 51 muestras de alimentos ahumados y\/o adicionados con aroma de humo y 13 aromas de humo. Los valores de benzo(alfa)pireno encontrados para las muestras adicionadas con aroma de humo y para estos, no superaron en ningun caso los limites establecidos por la legislacion, situados en 0.03
