Jose <\/strong><\/h2>\n<p>En este trabajo se ha realizado un estudio de las modificaciones que sufre en su composicion quimica el pimiento tipo padron (capsicum annuum, l.) Despues de someterlo durante un periodo de un a\u00f1o a diferentes procesos tecnologicos de conservacion (congelacion, normal y a vacio, y liofilizacion) con el fin de poder seleccionar el mas adecuado.  los compuestos estudiados fueron: pigmentos, aromas, acidos organicos, vitamina c, azucares, almidon, pectina, fibra insoluble y acidos grasos, siendo necesaria la puesta a punto de los metodos analiticos adecuados para la determinacion de acidos organicos, vitamina c y capsaicinoides.
