Los productos destinados a nutricion infantil son objeto de especial atencion en cuanto a los fenomenos de oxidacion lipidica dado a que son muy susceptibles de sufrirla, a causa de su propia composicion y a los tratamientos tecnologicos que sufren.  se han estudiado diversos aspectos que influyen en la oxidacion lipidica de estos productos, tales como presencia de antioxidantes, materias primas, tratamientos y composicion de las leches adaptadas y el efecto de las condiciones de almacenamiento.
