Este fruto una crisis climaterica muy aguda, con un rapido y fuerte incremento de la produccion autocatalitica de etileno y de la tasa respiratoria, lo que conlleva una estimulaci\u00f3n acelerada de los distintos procesos de la maduraci\u00f3n responsables de los parametros de calidad(firmeza, textura, color, aroma, sabor) y limita sensiblemente su periodo de conservacion y en consecuencia su potencial comercial.  debido a ello, la ruta de biosintesis de etileno, con las enzimas implicadas, se ha convertido en objetivo a manipular mediante tecnicas de ingenieria genetica. En el laboratorio de etileno y maduraci\u00f3n de frutos, del prof. pech del ensat de toulouse (francia) y en la compa\u00f1\u00eda de semilleros texier s.A. De valence(francia) se ha generado un tipo de mel\u00f3n cantaloupe charentais manipulado gen\u00e9ticamente en el cual se expresa un gen para el enzima acido 1-aminociclopropano-1-carboxilico oxidasa(aco), que interviene en la ultima etapa de la biosintesis de etileno, en orientacion antisentido. En dicho fruto se ha logrado inhibir la produci\u00f3n de etileno autocatalitico en mas de un 99% fenomenos que altera de forma acusada su maduracion. En este trabajo se ha llevado a cabo un estudio de la fisiolog\u00eda y bioquimica de la maduracion.
