Los aceites se emplearon en frituras repetidas de patatas sin reposicion de aceite hasta el limite de alteracion permitido, lo que se obtuvo con o tras 69 frituras, g tras 48 y op tras 80. Los aceites crudos y los usados en fritura se utilizaron al 8% como unica fuente grasa de dietas para ratas. Tambien se utilizaron las grasas extraidas de sardinas crudas (sc) o fritas en oliva (sf). Se valoro ingesta, crecimiento y utilizacion nutritiva de ca, p, mg, fe, zn y cu, asi como distintos parametros hematologicos y composicion de higado, bazo y piel y carcasa.  conclusiones: a) el tipo de aceite no altera la ingesta, crecimiento o balances minerales; si bien el g estimula levemente la digestibilidad de ca y la penetracion de fe y zn en eritrocitos. El consumo de aceites fritos favorece la absorcion de mg y la excrecion urinaria de mg, fe y zn, pero son tan aptos como los crudos para permitir la idonea utilizacion nutritiva de los minerales y la constitucion corporal. B) el imbalance de acidos grasos n3\/n6 de la dieta con sc merma ingesta y crecimiento, implicando menor aporte de todos los minerales al organismo. La digestibilidad y eficacia metabolica de fe disminuyen y se acumulan zn y cu en eritrocitos, quiza en respuesta al da\u00f1o oxidativo inducido por la dieta sc.
