En primer lugar, se han desarrollado metodos de electroforesis capilar para la cuantificacion de las proteinas de suero nativas y desnaturalizadas tras el tratamiento termico.  posteriormente, estos y otros metodos analiticos se han aplicado al estudio de la proteolisis de leches procesadas durante su almacenamiento, tomando especial atencion en aquellos peptidos que proceden de la hidrolisis de la k-caseina. Se ha estudiado, tambien, la deteccion de adulteraciones de leches uht con suero de queseria por la presencia de caseinomacropeptido (fragmento 105-169 de la k-caseina). Finalmente, uno de los metodos de electroforesis capilar desarrollados se ha aplicado al estudio de las variantes geneticas de leche de vaca, oveja y cabra.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos
