Una vez establecido el vino de condiciones optimas, se estudia la influencia que maderas de distinto origen tienen sobre las propiedades organolepticas de los vinos envejecidos.  los resultados de los analisis efectuados, junto a las pruebas organolepticas realizadas por el comite de expertos en cata de la d.O. Jumilla, confirman que los vinos de maceracion carbonica de 14 dias, la madera nueva y un tiempo de envejecimiento de 6 meses, proporcionan los vinos mas redondos. Igualmente y aunque sin claras diferencias, destaca por su mejor puntuacion el vino envejecido en barricas de roble americano fino.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
