Se sacrifican 124 corderos de ambos sexos a los que previamente se les han realizado controles de peso para conocer su crecimiento. Los pesos medios al nacimiento oscilaron entre 4,1 y 4,6 kg y los de sacrificio entre 19 y 26 kg. La ganancia media diaria en el periodo vari\u00f3 de 210 a 244 g\/d.  tras el sacrificio se retir\u00f3 el \u00abquinto cuarto\u00bb que representa el 34,5% del pvv. Las p\u00e9rdidas por oreo fueron inferiores al 3%. Los rendimientos canal van del 49,2% (pcc\/pvs) al 55,1% (pcc\/pvv).  la longitud media de las canales es de 52,6 cmm, y el \u00edndice de compacidad de la canal es de 200 g\/cm.  la canal se divide en dos mitades procedi\u00e9ndose a su despiece. Los trozos obtenidos pierna, espalda, costillar, badal, bajos y cuello representan, respectivamente, el 33,6%, 19,5%, 17,7%, 6,7%, 11,1% y 7,3% del pcf.  cada una de las piezas se disec\u00f3 en sus principales componentes: grasa, m\u00fasculo y hueso. La pieza m\u00e1s grasa fue bajos, la de mayor contenido muscular la pierna y la de mayor contenido \u00f3seo el cuello.  la canal representa un contenido graso medio del 19,1%, 52,7% de m\u00fasculo y 19,2% de hueso.  por conformaci\u00f3n, las canales se calificaron en las clases o (64,1%) y r (35,1%), por engrasamiento en medianamente grasas (88,6%) y grasas (9,7%), por engrasamiento renal en cubierto 2\/3 (80,7%) y totalmente cubierto (13,2%), y por color del m\u00fasculo en rosa p\u00e1lido (13,2%) y rosa (83,3%).  al sacrificio el ph del m\u00fasculo longissimus dorsi se estudi\u00f3 en 6,6 y 6,3 en el triceps brachii, valores que descienden a 5,8 y 5,9 a las 24h.  la cantidad de pigmento hem\u00ednico se cifr\u00f3 en 3,52 mg mb\/g, la luminosidad del m\u00fasculo en 49,111 el
