Carmen <\/strong><\/h2>\n<p>Distintas muestras de b-glucano de cebada, cubriendo un amplio intervalo de pesos moleculares, fueron caracterizadas mediante viscosimetria capilar y la tecnica de difusion de luz multiangular. Se ha demostrado a traves de las medidas viscosimetricas; que las propiedades fisicas del polimero son las mismas en agua y en cerveza. La validez de la calibracion universal aplicada a pululanos y b-glucanos ha sido confirmada. El b-glucano en solucion acuosa y en cerveza presenta la conformacion de cadena vermiforme tipica de cadenas rigidas. La tendencia del b-glucano a la agregacion ha sido confirmada a traves de distintas tecnicas analiticas. El comportamiento comparativo de las muestras de distinto peso molecular y a distintas temperaturas, sugiere la coexistencia de diferentes mecanismos de agregacion.  se han medido los pesos moleculares correspondientes al umbral de deteccion del sistema calcofluor-fia, que han resultado ser de 8.100 para el eluyente de alta fuerza ionica y 25.000 (eluyente base).
