Se han obtenido levadura vinicas capaces de producir alfa-l-arabinofuranosidasa y una beta-glucosidasa, localizandose en la fraccion extracelular y asociada a la pared de la levadura respectivamente. Se purificaron y caracterizaron ambas proteinas a partir de cada uno de los transformantes confirmando la identidad de las proteinas.  se han llevado a cabo microvinificaciones con las distintas levaduras y se ha detectado un incremento de acidos, alcoholes y esteres, especialmente en las vinificaciones con ambas levaduras.  se ha clonado una alfa-l-arabinofuranosidasa de aspergillus nidulans. El gen abfa de a. Nidulans y bgln de c. Molischiana se han empleado para obtener de forma independiente transformantes de a.
