Teresa <\/strong><\/h2>\n<p>El proceso calcocarbonico de depuracion de jugos de difusion se fundamenta en las reacciones que transcurren entre los no-azucares presentes en los jugos y los reactivos lechada de cal y dioxido de carbono. El objetivo del trabajo fue la realizacion de ensayos de depuracion, a nivel de planta piloto, que permitieran obtener jugos depurados de elevada calidad, atendiendo a parametros como: sales de calcio, cenizas, color y adecuado indice de filtrabilidad. Para conseguir este objetivo, se dise\u00f1o y construyo una planta piloto que permitiera la operacion en continuo y que constara de las unidades esenciales (equipo principal y auxiliar) que proporcionaran una completa depuracion del jugo. Se realizaron diferentes ensayos, obteniendose las condiciones optimas de operacion para las unidades de preencalado (variacion lineal de ph), encalado (85 grados c) y alcalinidad mayor de 12 g cao\/l), primera y segunda carbonatacion (alcalinidades 0.8 y 0.2 g cao\/l respect.).  por ultimo, se planteo un esquema novedoso de depuracion, realizando las operaciones de encalado y carbonatacion de forma simultanea, incluso dosificando bajas concentraciones de reactivos se obtuvieron jugos finales de alta calidad.
