A lo largo de la memoria se presenta un modelo basado en consideraciones bioquimicas que permite interpretar ambos problemas desde una perspectiva integrada. En concreto se demuestra que la tendencia a producir acido acetico es funcion del nivel de actividad aldehido deshidrogenasa y acetil coa sintetasa de la cepa de levadura, y que todas las rutas relacionadas con la produccion o consumo de este metabolito influyen en el nivel de volatil producido. La disminucion en acidez volatil provocada por la adicion de aceite de pepita de uva, rico en acidos grasos insaturados, se explica por la inhibicion de la sintesis de los acidos octanocio y decanoico. El problema de las paradas de fermentacion es funcion de la permeabilidad de las levaduras, y por tanto, de su composicion en acidos grasos. Se demuestra la existencia de altas actividades lipasicas en las enzimas pectoliticas industriales. Dichas actividades lipasicas afectan de forma sustancial el nivel de acidos grasos de los mostos, condicionando el metabolismo ulterior de las levaduras, particularmente si las adiciones y clarificaciones se realizan al aire y sin proteccion antioxidante.
