En el presente estudio se optimizan los metodos de preparacion de muestra y cuantificacion de minerales por espectrofotometria de absorcion atomica y vitaminas hidrosolubles mediante cromatografia liquida de alta resolucion; se evalua la cantidad de vitaminas y minerales en esparrago, tomate, champi\u00f1on y lenteja en funcion de la zona de cultivo, el momento de recogida y el proceso de elaboracion, asi como la evolucion de los mismos durante el almacenamiento de las conservas.
