Antonia <\/strong><\/h2>\n<p>El trabajo de investigacion realizado tuvo por objeto el estudio de la aptitud a la congelacion de dos variedades espa\u00f1olas de mango (lippens y smith). Para ello se determinaron las modificaciones que producen el proceso y la conservacion en estado congelado sobre las caracteristicas bioquimicas, nutricionales y sensoriales de los frutos, analizando el efecto de los pretratamientos de inmersion en jarabes de sacarosa con o sin cacl2 y del tipo de envasado.  la variedad smith resulto ser la que presentaba la mejor aptitud a la congelacion.
