Para lograr los objetivos propuestos, se ha intentado utilizar las tecnicas bioquimicas y microbiologicas mas adecuadas, de acuerdo con los parametros que se pretendian analizar.  los resultados obtenidos ponen de manifiesto que este producto carnico crudo-curado, a lo largo de la maduracion sufre un intenso proceso proteolitico, en el cual la participacion de la flora microbiana no es determinante. La estabilidad de la cecina depende fundamentalmente de la actividad de agua; esta estabilidad se consigue al final del periodo madurativo, aunque probablemente en etapas anteriores puede haberse alcanzado, por accion del cloruro sodico, de los nitritos y del propio humo. Por otro lado, el comportamiento evolutivo de los microorganismos de interes tecnologico analizados, es similar. Se observa un crecimiento durante las primeras etapas del proceso madurativo hasta la fase de ahumado, a partir de la cual se estabilizan hasta el final del proceso de
