Para ello se ha estudiado la influencia de los compuestos fen\u00f3licos presentes en las salmueras de fermentaci\u00f3n, dado su car\u00e1cter inhibidor, la disponibilidad de determinados factores de crecimiento en dichas salmueras y su utilizaci\u00f3n por las cepas silvestres de l. Plantarum aisladas y, finalmente, la capacidad de esta bacteria del \u00e1cido l\u00e1ctico para competir con otras poblaciones microbianas por la colonizaci\u00f3n del medio mediante la producci\u00f3n de bacteriocinas. La importancia de cada uno de estos factores en el desarrollo de l. Plantarum en las salmueras, junto con el estudio del material gen\u00e9tico extracromos\u00f3mico (pl\u00e1smidos) de estas bacterias, han sido los ejes del trabajo que se presenta en esta memoria de
