Carme <\/strong><\/h2>\n<p>Se han aislado 140 cepas de bacterias lactoicas a partir de mostos y vinos de comarcas del sur de catalu\u00f1a. De todas ellas 10 han sido seleccionadas en medio sintetico a diferentes phs y concentraciones de etanol. La actividad malolactica de estas 10 cepas fue comprobada con vinos tintos de final de fermentacion alcoholica, tres de ellas fueron seleccionadas como las de mayor actividad: x43, z42 y mb42b. De las 10 cepas seleccionadas 7 contienen profagos. Aproximadamente un 5% de las cepas han sido identificadas como lactobacillus plantartum, un 13% como lac. Brevis, un 24% como lactobacillus sp., Un 1% como pediococcus sp., Un 24% como leuconostoc oenos y el 32% restante como leuconostoc sp.. Finalmente, se ha realizado un estudio comparativo de dos cepas comerciales de leu. Oenos y una de lac.  plantarum; las dos primeras mostraron elevada actividad malolactica en el 90% de los ensayos, mientras que para lac.
