Las pruebas sensoriales indican que se mantienen bien durante el tiempo de conservacion ensayado (-18 grados c, 1 a\u00f1o). La velocidad de congelacion elegida es lenta (camara a -18 grados c). No hay modificaciones apreciables de la fraccion hemicelulosica de la pared celular al congelar la pi\u00f1a. Los cambios en azucares, acidos organicos y actividad enzimatica de peroxidasa son minimos a lo largo de la conservacion en estado congelado.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la
