Durante la maduracion del fruto, tiene lugar la conversion cloroplasto-cromoplasto y la disminucion de las actividades glutamina sintetasa (gs) y glutamato sintasas dependientes de ferredoxina y nadh. Por el contrario, la actividad y niveles de proteina de la isocitrato deshidrogenasa dependiente de nadp (idh) aumentan durante el proceso. La idh de frutos verdes y rojos se han purificado, presentando caracteristicas cineticas y moleculares parecidas a las descritas en otros tejidos vegetales. Algunos aminoacidos como el glutamato y sus derivados son cuantitativamente importantes en estos tejidos, registrandose un notable incremento en los niveles de glutamato durante la maduracion. A pesar de los cambios registrados en las actividades enzimaticas, solo se han registrado cambios en el contenido de isoenzimas gs, desapareciendo la isoforma cloroplastbidica durante la transicion cloroplasto-cromoplasto. Cambios en la expresion de isoenzimas gs tambien se han detectado en otros organos (hojas, cotiledones y raices) en aquellas condiciones fisiologicas que implican la diferenciacion del compartimento plastidico. Otra parte del trabajo descrito en esta memoria se ha centrado sobre la regulacion de la gs de raices. En estos tejidos, los valores de actividad son bajos y son debidos a la presencia de un inhibidor macromolecular de naturaleza proteica, que parece competir con la gs por los sustratos de la reaccion; sin embargo, otros resultados de esta memoria, tambien sugieren que un complejo gs-inhibidor puede ser responsable de los bajos niveles de actividad gs en raices de
