El trabajo consta de dos fases fundamentales: seleccion de levaduras y dise\u00f1o de los procesos de obtencion de vinos ligeros, obtencion y evaluacion de los mismos.  mediante un seguimiento analitico de los metabolitos formados en la fermentacion y evaluacion analitica y sensorial de los vinos obtenidos a partir de seis cepas de levaduras del genero \u00absaccharomyces\u00bb, se selecciono la levadura autoctona del propio mosto de partida, que se empleo en las experiencias posteriores. Se elaboraron seis vinos ligeros por fermentacion controlada de mosto de uva, combinandola con procesos de desalcoholizacion en columna de destilacion.  las bebidas obtenidas (aproximadamente de 6 grados) se evaluaron analitica y sensorialmente y se hizo una consideracion global frente a las etapas de elaboracion de cada una de ellas.
