En el presente trabajo se ha demostrado que las condiciones climatologicas durante la recoleccion afectan tanto a la cantidad de levaduras presentes en el mosto como a su diversidad. Estas variaciones en la flora levaduriforme influyen en la calidad final del vino. Para resolver este problema se ha seleccionado una levadura de la d.O.  alicante, denominada t73, que se adapto bien a los mostos de esta denominacion.  para confirmar la implantacion de la levadura t73 en un proceso de fermentacion industrial se han aplicado tecnicas de diferenciacion basadas en microbiolog\u00eda clasica, analisis de patrones de proteinas, el polimorfismo de diversas regiones del dna nuclear, patrones de cromosomas y restriccion del dna mitocondrial. Del total de tecnicas analizadas tan solo el analisis de los patrones de cromosomas y los patrones de restriccion rindieron resultados satisfactorios. Sin embargo, la complejidad de estas tecnicas dificulta su utilizacion a nivel industrial. Para resolver este problema, se ha desarrollado una nueva tecnica para el analisis del mtdna que no requiere material sofisticado, es rapida y economica. Utilizando esta tecnica se ha comprobado la implantacion de la cepa t73 a nivel industrial y se ha estudiado la dinamica poblacional tanto en fermentaciones inoculadas como
