El objetivo es evaluar la capacidad de este sistema enzimatico para llevar a cabo la degradacion proteolitica asociada al ablandamiento de la carne en su maduracion en las condiciones normalmente presentes. Se inicia tambien un estudio de tratamientos que aceleren la maduracion de la carne por activacion de las calpainas.  se demuestra que las calpainas ejercen una accion proteolitica similar a la que se verifica en el proceso de maduracion de la carne, y que son activas en esas mismas condiciones, por lo que necesariamente deben ser responsables del ablandamiento que se produce en dicho proceso. Los tratamientos que activan las calpainas, bien sea la adicion de calcio o de inositol-1,4,5- trisfosfato, o bien la ultrasonicacion deben ser contemplados pues como metodos utiles para acelerar el
