Para el seguimiento del proceso se han desarrollado (a) un analizador automatico de la actividad lipasica; (b) una metodolog\u00eda para la medida del consumo de o2 y la produccion de co2, mediante un espectrometro de masas. En el esquema de reaccion macroscopico propuesto, c. Rugosa crece sobre aceite de oliva 1 hidrolizando, 2 consumiendo el glicerol y 3 usando el acido olecico. Solo el ultimo paso se asocia con la produccion de lipasa. Este esquema cualitativo se ha traducido en un modelo matematico cuantitativo que presenta buena concordancia con los datos experimentales.  cuando se utiliza la operacion en continuo, la actividad lipolitica crece hasta alcanzar un maximo y desciende despues segun la curva de lavado. Este suceso parece reflejar la interrupcion de la produccion de lipasa. Ante este comportamiento se sugiere como estrategia de produccion provocar dicho maximo y detener el proceso de forma inmediata, utilizando para ello el medidor automatico de lipasa, dada la elevada
