La composicion en gluteninas de alto peso molecular (hmw), bajo peso molecular (lmw) y gliadinas se determino mediante electroforesis en geles de poliacrilamida con sds (sds-page) y en medio acido (a-page). La influencia de las prolaminas sobre la calidad se analizo mediante el test sds-sedimentacion y el mixografo. La herencia de las guteninas hmw confirmaron resultados anteriores. Los bloques de gluteninas lmw y gliadinas que segregaban en f2 se asignaron a los correspondientes loci gli-1, glu-3 y gli-2. Las prolaminas que tenian una mayor influencia sobre la calidad fueron las subunidades de gluteninas hmw 2  y 1 del locus glu-a1, las subunidades 5+10 del locus glu-d1, el bloque alelico de gliadinas
