La clasificacion de 350 cepas aisladas de la zona ha mostrado que todas ellas pertenecen al genero lactobacillus observandose una distribucion constante de los tipos fermentativos durante tres campa\u00f1as consecutivas. El estudio de las condiciones optimas de inoculacion, de una cepa previamente seleccionada, permitio extrapolar resultados e inducir la fermentacion malolactica a nivel de bodega, utilizando una tasa de 107 celulas por mililitro y siendo el momento mas apropiado para dicha inoculacion, el comienzo de la fermentacion alcoholica.  la fermentacion malolactica esta implicada en mecanismos quimiosmoticos que relacionan dicha transformacion con la produccion de potenciales de membrana que generan energia, aunque esta no es necesaria para que tenga lugar el
