Asi mismo se ha estudiado la cinetica de esta hidrolisis. El sustrato utilizado ha sido harina de trigo tostada durante una hora a 150 c y las enzimas alfa-amilasa y pululanasa. En practicamente la totalidad de los experimentos se ha mantenido constante el ph=5 y la temperatura, 50 c, la conversion del sustrato se ha correlacionado con todas las variables de operacion concentraciones de enzima y sustrato, tiempo y temperatura) y la cinetica de la hidrolisis se ha ajustado. A un modelo teorico de dos reacciones en serie en que la enzima se une simultaneamente a dos centros activos del sustrato. La mejor distribucion de pesos moleculares se ha obtenido licuando el almidon con alfa-amilasa y gelatinizandoco a continuacion, lo cual potencia la accion de la
