Cerevisiae y otras cuatro de posible aplicacion biotecnologica a corto y medio plazo.  c. Utilis, c. Pseudotropicalis, p. Stipitis y k.  marxianus (coleccion igc).  como criterio basico de tolerancia hemos determinado la inhibicion por etanol, de la tasa especifica de fermentacion. Asimismo se han aplicado dos metodos de cuantificacion de tolerancia a etanol, basados en la alteracion por este alcohol de la permeabilidad de la membrana plasmatica en levaduras. Estos metodos han sido propuestos por jimenez y van uden (1985) y salgueiro y cols., (1988).  los resultados obtenidos muestran que las cuatro estirpes diferentes de saccharomyces, se incluyen en el grupo de tolerancia a etanol media-baja.
