Para ello se caracteriz\u00f3 el diagrama de estado del mango en t\u00e9rminos de las curvas de fusi\u00f3n de hielo y curva de transici\u00f3n v\u00edtrea de la fase acuosa amorfa. Se estudi\u00f3 la cin\u00e9tica de perdida de agua, peso y volumen y ganancia de solutos y de cambios de concentraci\u00f3n de la fase l\u00edquida de las muestras en ocho tratamientos de deshidrataci\u00f3n osm\u00f3tica. Estos se llevaron a cabo a 30\u00c2\u00bac, con y sin aplicaci\u00f3n de un pulso de vac\u00edo, con disoluciones de glucosa (50\u00c2\u00babrix) y sacarosa (59\u00c2\u00babrix) y en muestras de mango fresco y muestras sometidas a un pretratamiento de escaldado. Se analiz\u00f3 el efecto crioprotector de los diferentes tratamientos osm\u00f3ticos durante la conservaci\u00f3n del mango en diferentes periodos de almacenamiento en congelaci\u00f3n (1,30 y 90 d\u00edas). En este sentido, se consideraron 16 tratamientos osm\u00f3ticos adem\u00e1s de los controles de mango fresco y de mango escaldado. las variables consideradas en los tratamientos destinados a congelaci\u00f3n fueron las del estudio cin\u00e9tico mas el nivel de concentraci\u00f3n de la fase l\u00edquida de las muestras (25 y 35\u00c2\u00babrix). Durante el almacenamiento en congelaci\u00f3n se control\u00f3 la evoluci\u00f3n de la calidad de las muestras con diferentes pretratamientos en t\u00e9rminos de p\u00e9rdidas de l\u00edquido durante la descongelaci\u00f3n y de los cambios de color y propiedaes mec\u00e1ncias de las muestras. En general los tratamientos con sacaros y sin pulso de vac\u00edo comportaron menos p\u00e9rdida de l\u00edquido y mejor preservaci\u00f3n del color del mango durante la
