Asi, las isoflavonas de altramuz, a concentraciones del orden de micromolar, son potentes inhibidores de la oxidacion del aia y del alcohol coniferilico catalizadas por peroxidasa de pared celular. En el caso de la genisteina este efecto inhibidor se debe a su capacidad de secuestrar radicales superoxido asi como la de competir por el centro activo de la enzima por ser sustrato de peroxidasas, pudiendo por tanto participar en el metabolismo oxidativo de esta.  las isoenzimas acidas de pared celular son mas eficaces en la oxidacion del aia y del alcohol coniferilico que las isoenzimas fuertemente basicas tambien localizadas en la pared celular.  estas isoenzimas acidas son capaces de oxidar al alcohol coniferilico en una reaccion dependiente de aia y oxigeno, por lo que, aparentemente no es necesario un sistema independiente generador del peroxido de hidrogeno necesario para la lingnificacion de la pared celular.
