Las especies identificadas fueron l.Sake 55% l.Curvatus 26% l.Bavaricus 11% y l.Plantarum 8%. Los principales criterios para la identificacion de los aislados a nivel de especie fueron:  produccion de los isomeros del acido lactico, presencia de acido mdpm en paredes celulares, desaminacion de la arginina y fermentacion de manitol y melibiosa. La composicion de la poblacion de lactobacilos en los dos estadios del proceso fue la misma.  se evaluo el contenido plasmidico de una muestra de 30 cepas mediante diferentes metodos de lisis y extraccion.  el 90% de las cepas estudiadas contenian de 2 a 9 plasmidos con tama\u00f1os de 1,8 a 82,3 kb. El metodo de extraccion mas eficiente fue el de anderson-mc kay. Los perfiles plasmidicos de estas cepas fueron analizados para investigar la homolog\u00eda y distribucion de los plasmidos en relacion con la ecolog\u00eda de estos microorganismos en productos carnicos. Mediante una sonda de un plasmido (plc2) de peque\u00f1o tama\u00f1o de l.Curvatus se detectaron plasmidos relacionados con ella en cepas de l.Sake, l.Curvatus y l.Bavaricus. El mapeo mediante enzimas de restriccion de 2 plasmidos cripiticos de l.Sake y l.
