Dolores <\/strong><\/h2>\n<p>Espa\u00f1a es el primer productor y exportador de algarroba, con una produccion anual de 150.000 tm (mapa, 1986). La algarroba es una legumbre con un alto contenido en azucares (20-50%), fibra y taninos y bajo en proteina y materia grasa. Sus componentes principales son: la pulpa que representa el 90% del fruto, destacando su alto contenido en azucares como sacarosa, glucosa y fructosa y en taninos y la semilla que representa el 10% restante, su principal utilizacion es la extraccion de la \u00abharina de garrofin\u00bb.  el presente trabajo pone a punto un metodo para la obtencion de un jarabe azucarado (mezcla de azucares en disolucion) a partir de la pulpa de algarroba, optimizando las siguientes etapas:  1. Etapa de extraccion.- Se dise\u00f1an sistemas de extraccion tanto en discontinuo como en continuo, viendo como afectan cada una de las variables estudiadas, en ambos casos, al proceso de extraccion.  2.- Etapa de purificacion.- El extracto anterior se diluye y purifica en primer lugar en forma discontinua con diversos agentes clarificantes: lechada de cal, bentonitas, carbon activo, resinas anionicas y posteriormente se lleva a cabo una purificacion en continuo con columnas rellenas de carbon activo, resinas intercambiadoras de iones, resinas adsorbentes o diferentes combinaciones de las mismas.  3.- Etapa de concentracion.- El extracto asi obtenido se concentra dando lugar a un jarabe azucarado con un 58% de azucares.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral \u00ab<strong>Productos derivados de la pulpa de algarroba: obtencion y purificacion de un jarabe azucarado.<\/strong>\u00ab<\/h3>\n<ul>\n<li><strong>T\u00edtulo de la tesis:<\/strong>\u00a0 Productos derivados de la pulpa de algarroba: obtencion y purificacion de un jarabe azucarado. <\/li>\n<li><strong>Autor:<\/strong>\u00a0  Petit Dominguez M.
