As\u00ed algunos de estos beikosts presentan una formualci\u00f3n en la que la carne es el ingrediente jprincipal (bikosts conuna base de carne, bbc), la sdenominaciones comerciales de los platos completos incluidos en la investigaci\u00f3nhan sido pollo con arroz (pa), ternera con zanahorai (tz) y menestra de cordero (mc), sobre cuyas formulaciones comerciales se han introducido ciertas modificaciones de sus ingjredientes de acuerdo con un plan experimental factorial incompleto.  en este trabajo se ha investigado la posible aplicaci\u00f3n de la t\u00e9cnica ft-mir, al control de calidad de bbc: se utiliz\u00f3 la metodolog\u00eda de respuesta en superficie como herramienta estad\u00edstica en el proceso de optimizaci\u00f3n de la t\u00e9ncina ft-mir para su utilizaci\u00f3n en el procesod e control de calidad de bbc, consierando como factores claves, la temperatura a la que se jobtiene el espectro y el n\u00famero de barridos a partir del cual se obtiene el especro medio. Una vez que se obtuvieron unas condiciones \u00f3ptimas (200 barridos y el 31,5\u00c2\u00bac), se procedi\u00f3 a desarrollar un nuevo m\u00e9todo anal\u00edtico basado en la espectroscop\u00eda infrarroja en la regi\u00f3n de 4000 a 800 cm-1 que permiti\u00f3 la cuantifiaci\u00f3n r\u00e1pida y fiable de varios componentes centesimales de los beikosts estudiados. Los resultados pusieron de manifiesto ue la importancia cuantitativa del factor temperatura en la obtenci\u00f3n del espectro, a los efectos cuantitativos inherentes a la t\u00e9cnica ft-mir, es marcadamente superior en el caso de la prote\u00edna que para los momponentes humedad y contenido graso.  utilizando el m\u00e9todo quimiom\u00e9trico de regresi\u00f3n parcial con m\u00ednimos
