Valle Mart\u00ednez Ortega <\/strong><\/h2>\n<p>Esta tesis se divide en tres grandes apartados.  en el primero de ellos se determina el resveratral en vinos del sur de espa\u00f1a, encontr\u00e1ndose una relaci\u00f3n entre sus niveles, el grado de presi\u00f3n aplicada a la obtenci\u00f3n del mosto y determinados factores meterol\u00f3gicos.  en el segundo, se estudia si los compuestos fen\u00f3licos son resistentes al proceso gastrointestinal con un ensayo in vitro.  en el \u00faltimo apartado se comparan diversos tratamientos de muestras biol\u00f3gicas encaminados a la medida en las mismas de los compuestos fen\u00f3licos se encuentran una serie de causas interferentes, que son la temperatura, el ph y las prote\u00ednas y enzimas plasm\u00e1ticas.
