Jose <\/strong><\/h2>\n<p>Se han puesto a punto los metodos analiticos necesarios para determinar acidos organicos durante los procesos de maduracion de seis variedades de manzana asturianas y en mostos en fermentacion, siendo el mas adecuado la hplc de reparto en fase inversa, empleando columnas de octadecilsilano de 5 micras de tama\u00f1o de particula como fase estacionaria, y una fase movil constituida por una disolucion reguladora de fosfatos, que suprima la ionizacion de los acidos organicos a separar (ph  2.25, 25 c. De temperatura, flujo 0.5 ml\/min y deteccion u.V.
