La tecnica empleada fue en los dos casos la cromatografia liquida de alta eficacia en su modalidad de fase inversa, previa derivatizacion con o-ftaldialdehido\/2-mercaptoetanol. Se observo un comportamiento uniforme en las seis variedades con respecto al aminoacido serina, que podria resultar de interes en la determinacion del momento de maduracion de la manzana, y una evolucion diferente de los aminoacidos presentes en los mostos en funcion del tratamiento al que son sometidos.
