Jose <\/strong><\/h2>\n<p>Las bacterias lacticas son importantes en vinificacion pues son las responsables de la realizacion de la fermentacion malolacticas. Este proceso contribuye de forma determinante a mejorar la calidad organoleptica de un vino.  se estudio la influencia que diversos factores fisico-quimicos (ph, temperatura, grado alcoholico y co2) tienen sobre el crecimiento en medio sintetico de 3 cepas de bacterias lacticas de coleccion y 3 aisladas de los vinos de la denominacion de origen util-requena. Las cepas mas resistentes a las condiciones adversas fueron las pertenecientes a la especie lactobacillus plantarum. Ambas cepas pertenecientes a la especie leuconostoc oenos fueron tambien resistentes a concentraciones elevadas de etanos y los ph acidos.  la fisiolog\u00eda de la fermentacion malolactica fue estudiada en la cepa lactobacillus plantarum cect 220, observandose que esta reaccion posee un papel protector frente a los ph acidos. Ademas, la fermentacion malolactica, en este cas, produce energia que no tiene un origen quimiosmotico y parece estar relacionada con una posible capacidad de la celula para degradar acido lactico.
