Al aplicar tecnicas en el proceso de elaboracion de los vinos de la d.O. Jerez, se han identificando las cepas de levaduras flor, se ha demostrado que la levadura comercial usada en la bodega no es la responsable de la fermentaci\u00f3n, siendo las autoctonas las que actuan, y se han caracterizado las cepas implicadas en el envejecimiento de los vinos. Por ultimo, se ha demostrado que las variedades de uva, la localizacion geografica de los vi\u00f1edos y la metodlogia de la vinificacion, influyen en la poblacion levaduriforme
