El analisis sensorial permite relacionar la fisiolog\u00eda y bioquimica del fruto con las exigencias del consumidor, pudiendo establecerse indices de calidad en relacion a la recoleccion y consumo.  el objetivo de este trabajo es determinar la evolucion de la calidad sensorial del melocoton, en diferentes estados de maduracion, para establecer el optimo de madurez para su consumo. Estudiar la influencia de la conservacion a baja temperatura, sobre los principales atributos que definen su calidad. asmismo se estudia la calidad sensorial del melocoton en conserva en distintos estados de maduracion, a fin de establecer el optimo en la conservacion, y el efecto de almacenamiento en camara frigorifica, previo a la transformacion, sobre la calidad sensorial del fruto.  la evaluacion de la calidad sensorial se ha efectuado con un perfil descriptivo, con un panel de 8 catadores entrenados para evaluar la intensidad de 12 atributos sensoriales, relacionados con el aroma, color, sabor y textura del fruto en paralelo con los analisis fisico-quimicos para su contraste.  el tratamiento estadistico de los resultados ha consistido en el analisis de la varianza (anova), para evaluar los catadores, sus juicios en el analisis de los atributos sensoriales, el grado de concordancia de los mismos y la fiabilidad de los resultados, para contrastar los parametros fisico-quimicos
