Jos\u00e9 Moyano Perez <\/strong><\/h2>\n<p>Se ha realizado un estudio de caracterizaci\u00f3n crom\u00e1tica en 1700 aceites de oliva v\u00edrgenes, obtenidos a partir de diferentes variedades de aceituna en distintos estados de maduraci\u00f3n, con una amplia variabilidad fisioqu\u00edmica, lo que permite asegurar una buena representaci\u00f3n de la producci\u00f3n de aceites en andaluc\u00eda.  la medida del color se ha llevado a cabo por colorimetr\u00eda triest\u00edmulo a partir de medidas espectrofotom\u00e9tricas de transmisi\u00f3n, poni\u00e9ndose de manifiesto que proporciona m\u00e9todos adecuados para la medida del color de los aceites de oliva v\u00edrgenes, mediante t\u00e9cnicas objetivas, r\u00e1pidas y no destructivas.  existen diferencias en los espectros de absorci\u00f3n visible entre variedades y entre estados de maduraci\u00f3n, presentando, en todos los cas os, tres zonas diferenciadas relacionadas con los compuestos qu\u00edmicos responsables del color.  la distribuci\u00f3n de los aceites en los espacios de color ciexyz, cieluy y cielab presenta una importante variabilidad crom\u00e1tica desde el punto de vista cuantitativo, y una menor variabilidad cualitativa.  la aplicaci\u00f3n del an\u00e1lisis \u00abcluster\u00bb para cada espacio de color proporcional buenas clasificaciones por maduraci\u00f3n cuando se toma por separado las diferentes varieades.  el an\u00e1lisis discriminante factorial proporciona altos porcentajes de clasificaci\u00f3n correcta en determinados grupos preestablecidos, como es el caso de los aceites de \u00abarbequina\u00bb en los diferentes estados de maduraci\u00f3n.  en el estudio de correlaciones entre las caracter\u00edsticas crom\u00e1ticas y fisicoqu\u00edmicas analizadas destacan las regresiones obtenidas con los \u00edndices de materias colorantes y determinados \u00e1cidos grasos (palmitoleico y gadoleico), que mejoran al aplciar modelos no lineales de tipo polin\u00f3mico.  se ha demostrado la falta de fiabilidad del m\u00e9todo oficial abt para la determinaci\u00f3n del color en aceites.  mediante la aplicaci\u00f3n del m\u00e9todo de los vectores caracter\u00edsticos se han consegu<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral \u00ab<strong>Estudio del color de aceites de oliva v\u00edrgenes de andaluc\u00eda<\/strong>\u00ab<\/h3>\n<ul>\n<li><strong>T\u00edtulo de la tesis:<\/strong>\u00a0 Estudio del color de aceites de oliva v\u00edrgenes de andaluc\u00eda<\/li>\n<li><strong>Autor:<\/strong>\u00a0 M.
