Se encuentran amparadas por dicha denominaci\u00f3n espec\u00edfica un total de siete variedades: jud\u00eda blanca de ri\u00f1\u00f3n, blanca redonda, morada larga, morada redonda, judi\u00f3n, arrocina y planchada.  el objetivo perseguido en el presente estudio ha sido la caracterizaci\u00f3n de las jud\u00edas con denominaci\u00f3n espec\u00edfica \u00abel barco de \u00e1vila\u00bb, para lo cual se ha estudiado su composici\u00f3n qu\u00edmica en estado crudo, tras su almacenamiento durante un a\u00f1o en dos h\u00e1bitats diferentes (Madrid y \u00e1vila) y despu\u00e9s del tratamiento culinario (remojo y cocci\u00f3n).  se caracterizan porque presentan un contenido de auga del 9 &#8211; 14%, inferior al valor m\u00e1ximo marcado por la legislaci\u00f3n vigente, siendo su componente mayoritario los hidratos de carbono disponibles totales, seguidos por la fibra neutro detergente y las prote\u00ednas. Entre los az\u00facares solubles destaca su contenido de sacarosa y estaquiosa, y dentro de los elementos minerales poseen altos porcentajes de potasio, junto con cantidades importantes de calcio y magnesio, y valores elevados de hierro. Respecto a la composici\u00f3n de su grasa, los \u00e1cidos grasos insaturados destacan frente a los saturados, siendo los \u00e1cidos linoleicos y linol\u00e9nicos los mayoritarios. Presentan en crudo cantidades importantes de \u00e1cido ox\u00e1lico y de actividad del inhibidor de tripsina.  tras su almacenamiento se produce un descenso en los niveles de humedad y disminuciones de los az\u00facares solubles galactosa, rafinosa y estaquiosa, junto con aumentos de sacarosa.  despu\u00e9s del tratamiento culinario tiene lugar una fuerte absorci\u00f3n de agua, p\u00e9rdidas
