Virginia <\/strong><\/h2>\n<p>Dada la importancia de la contribuci\u00f3n de los \u00e9steres de acetato a la calidad arom\u00e1tica de los vinos, se ha hecho especial hincapi\u00e9 en el estudio de las enzimas implicadas en su s\u00edntesis, alcohol acetil-transferasa (aatfasa) y \u00e9ster-sintasa (esasa), e hidr\u00f3lisis, \u00e9ster-hidrolasasa (ehasa). Sin embargo estos estudios se han centrado en saccharomyces cerevisiae, la principal especie de levadura responsable de la fermentaci\u00f3n alcoh\u00f3lica. Aunque las levaduras no-saccharomyces son capaces de producir metabolitos secundarios de gran importancia en el aroma y sabor de los vinos, poco se sabe de las actividades enzim\u00e1ticas implicadas en la formaci\u00f3n de \u00e9steres.  el principal objetivo de esta tesis es el estudio de las actividades enzim\u00e1ticas implicadas en la producci\u00f3n de \u00e9steres de acetato en levaduras no-saccharomyces. para ello en primer lugar se han seleccionado cepas de levadura que presentan la capacidad de formaci\u00f3n de \u00e9steres de acetato. Su actividad aatfasa para distintos \u00e9steres de acetato se ha determinado mediante la aplicaci\u00f3n de un modelo cin\u00e9tico, desarrollado en este trabajo, que permite el caculo de dicha actividad cuando en el extracto celular se halla presenta la ctividad ehasa. As\u00ed mismo tambi\u00e9n se ha caracterizado su actividad ehasa determin\u00e1ndose las constantes cin\u00e9ticas de la reacci\u00f3n de hidr\u00f3lisis de los \u00e9steres.
