Estas enzimas se encuentran distribuidas en la naturaleza en numerosos microorganismos, en plantas y en tejidos animales. Su aplicaci\u00f3n fundamental esta en las reacciones de hidr\u00f3lisis de lactosa en productos y subproductos l\u00e1cteos (leche, sueros de queser\u00eda .., Etc.). El motivo fundamental de su aplicaci\u00f3n radica esencialmente en dos postulados:  1,- eliminaci\u00f3n total de lactosa en leche, de gran inter\u00e9s, ya que constituye un contratiempo importante para personas que no son capaces de metablizar libremente ese disac\u00e1rido, ya sea, porque hallan perdido esa capacidad de forma hereditaria o por alg\u00fan accidente de tipo metab\u00f3lico. Este problema lo padece un porcentaje basante alto de la poblaci\u00f3n mundial (en torno al 70%), siendo mas severo en las poblaciones de raza negra. La supresi\u00f3n completa del h\u00e1bito de ingerir productos l\u00e1cteos, puede traer graves consecuencias al organismos humano, ya que este producto constituye la fundamental para el aporte de muchas prote\u00ednas, vitaminas y otras fuentes de energ\u00eda, con lo cual esta deficiencia puede, incluso provocar la muerte del individuo intolerante.  2,- a escala industrial, su eliminaci\u00f3n, constituye un importante avance, en la producci\u00f3n y maduraci\u00f3n de quesos, ya que el proceso se ver\u00eda acelerado al usar las bacterias responsables en los procesos fermentativos usan glucosa, m\u00e1s f\u00e1cilmente dirigida, en vez de hacerlo con lactosa. Otra de las implicaciones industriales importantes radica en la eliminaci\u00f3n de este disac\u00e1rido en los residuos formados tras la producci\u00f3n de quesos.
