Las muestras objeto del estudio se prepararon calentando mezclas equimolares de glucosa-lisina y glucosa-metionina (40% de humedad), a 150\u00c2\u00bac durante 30, 60 y 90 minutos.  en primer lugar, se evalu\u00f3 el efecto de las muestras sobre la solubilidad in vitro de los minerales calcio, magnesio, hierro, cobre y zinc. En cultivos celulares, utilizando la l\u00ednea celular caco-2, se estudi\u00f3 la influencia de la presencia en el medio de cultivo de las muestras calentadas a 30 y 60 minutos sobre la captaci\u00f3n de zinc y el transporte de calcio y zinc a trav\u00e9s del enterocito.  en los ensayos in vivo en ratas se analiz\u00f3 la influencia de la inclusi\u00f3n de un 3% de las muestras calentadas durante 30 y 90 minutos en una dieta equilibrada sobre la biodisponibilidad de los minerales calcio, f\u00f3sforo, magnesio, hierro, cobre y zinc, as\u00ed como los cambios sufridos por el valor nutritivo de la prote\u00edna diet\u00e9tica. Para ello se utilizaron m\u00e9todos de balance por carcasa durante todo el peri\u00f3do experimental, balance en las \u00faltima semana del ensayo mediante la recogida de la eliminaci\u00f3n fecal y urinaria y determinaci\u00f3n de los contenidos tisulares de los distintos minerales. el periodo experimental fue de 21 d\u00edas, durante los que se controlaron semanalmente la ingesta y el peso de los animales, realiz\u00e1ndose el balance por recogida durante la \u00faltima semanal. Al final de los ensayos se sacrificaron los animales y se obtuvieron muestras de sangre, h\u00edgado, bazo, ri\u00f1\u00f3n, piel, f\u00e9mur, intestino delgado y contenido de ciego.
